The tall canopy of Sassafras albidum is a wealthy combination of leaves that take on 3 different forms: ovate, mitten-shaped, and tri-lobed. Considered a small to medium tree which grows up to 60 feet tall, Sassafras trees are often found in the forest margins and can grow in large colonies in the wild. Providing excellent fall color in shades of purple, red and orange, Sassafras is probably best known for its medicinal and culinary uses. Herbalists have used Sassafras oils in tonics for a large number of medical uses. In the culinary realm, root oils are used for root beer flavoring and the bark for Sassafras tea.
