Valeriana officinalis / Valerian
Valerian is an herbal medicine native to Europe. It has scented leaves, stems, flowers and roots and can grow 3-5 feet tall. Leaves are composed of toothed, lance-shaped leaflets, and the blooms are white to pale pink. Extracts can be used for flavorings in foods and teas, or an addition to perfumes, in addition to supporting mental well-being. It also is a key ingredient in biodynamic compost preparations. This plant does well in average garden soils with consistent moisture in full sun, though it is easily adaptable. Deadhead the flowers to prevent it from self-seeding as this plant can become weedy.
